You can roast the green chilis your self, or we’re lucky enough to have a grocery store close that roasts the chilis once a year and we make sure to stock up. You can used canned green chilis, but there is just something about fresh roasted chilies that make this dish even more delicious. It’s a great way to enjoy the summer harvest and head into fall. Spicy, savory and hearty, this dish is great on its own, served with rice or quinoa or even use chips to scoop it up!
